Retired Rabbit’s Reserve Editions:
Rabbit’s Reserve #1: Chocolate Porter. Released November 2011. The inaugural Rabbit’s Reserve was a silky porter, weighing in at 8%, this winter warmer was an instant hit with dark ale fans. A cask of this porter, laced with Creme de Menthe and cocoa nibs won First Place in the Specialty Category at the Atlanta Cask Ale Festival.
Rabbit’s Reserve #2: Imperial Red IPA. Released February 2012. This malty, hoppy IIPA was 9.4% with 80 IBUs. This beer allowed us to test the limits of our brewhouse, to see exactly what we could create without adding extra fermentables. This was the very satisfying result.
Rabbit’s Reserve #3: Saison. Released June 2012. Red Hare celebrates all things summer with the release of Saison, a true farmhouse ale. This 5.5% brew’s character is born in the ingredients: a grain bill of pilsen, wheat and Munich malts, enhanced by U.S Brewer’s Gold and French Strisselspalt hops to give it a slightly spicy, somewhat earthy taste – we think you’ll find hints of black currant and citrus. We add a traditional Belgian ale yeast fermented in true Saison style – at 90 degrees – then combined with second yeast to create a flavor profile unique to this beer alone. Won Gold in the French/Belgian Saison category at the 2012 U.S. Beer Open Championship.
Rabbit’s Reserve #4: OktoberfestIn celebration of all things German, Red Hare used classic ingredients from the motherland of bier to recreate this much beloved celebratory beer style for the fourth Rabbit’s Reserve: Oktoberfest. The result is a lucid copper hued brew, characterized by a malty, bready and slightly nutty smooth taste. Red Hare’s brewers took a classic marzen grain bill starting with Munich and Vienna malts, then added wheat and a new Maltster’s Reserve crystal malt to give a new dimension to the classic Oktoberfest taste. German Hallertau hops help balance out the malt, provide a slightly earthy aroma and lend a fruity hint to the taste. A traditional German lager yeast shipped over from Munich set the stage for a lengthy lagering process which was key to the flavor profile for this German lager beer style.
Rabbit’s Reserve #5: Released February 9, 2013. Bitter Hearts Double Black IPA is a complex brew, not for the faint of heart. This imperial black IPA is bittered with Falconer’s Flight, Chinook, and Cascade hops. We use Crystal Malts to balance the hops while the Midnight Wheat gives it a rich dark color. We finish it off by dry-hopping it with Summit, Cascade, and Colombus whole coned hops. This beer is black in color with a fragrant aroma. It starts out smooth and finishes with a super bitter bite.
